Sweet Shredded Pork


1-10 lbs Pork tenderloin roast ( any pork roast will work)
2 cans of Tomato sauce 15 oz
1 1/2 cups brown sugar
1 can of coke or Dr Pepper
1 clove garlic diced
1/4 cup cilantro minced

Add your meat to the Crock pot, I think it taste best if you use about 5 lbs….I did it with 8 lbs and the flavors were not as bold as I would have liked them. But the Recipe says you can use up to 10lbs so it is all a matter of taste.

Add you Tomato sauce, brown sugar, and garlic.

Add can of soda, and cilantro. ( If you do not want to cook with soda I guess you could use broth instead)

Put the lid on your crock pot, cook over Medium Heat at Least 4 hours. ( you can cook longer)

Once tender and pulls off easily with a fork, take out of liquid and shred with a fork.

Once Pork is shredded, return to liquid.

Eat on tortilla, with rice, black beans, cheese, tomatoes, lettuce and Cilantro Ranch.

Easy Chicken Pot Pie


Here's what you'll need:

2 pre-made pie crusts, room temp - Jacie's way
OR
1 tube of refrigerated biscuits - my way
1 (14 oz.) can chicken
1 (8-10 oz.) pkg. frozen peas and carrots (or veggies of choice)
2-3 C. frozen cube hash browns
4 oz. cream cheese (half a cube)
1 can cream of chicken soup
3/4 C. water
1/4 C. Italian dressing
Salt & pepper

In a large pan, on medium heat, heat chicken in Italian dressing and salt and pepper to taste.

Add cream cheese. After it has melted, add water and cream of chicken soup and mix until combined.

Add veggies and potatoes.

Now, here's where your options come into play.

Jacie, using pie crust, will put one crust in a pie pan, fill it with the chicken mixture, then top it with another pie crust. Make sure to make vent holes in the top crust. Bake at 375 degrees for 1 hour. Allow to rest for 15-20 minutes before cutting into. This is how you make chicken pot pie to it's true form.

I like bending the rules a little.

I use six ramekins, spray them well with non-stick spray, fill 3/4 full with the chicken mixture,

and top with a rolled out biscuit.

Place on a baking tray

and bake at 400 degrees for 15-18 minutes or until the biscuit is golden. Brush with butter to make it look prettier. Then dive right in!

Don't they look so cute?! They're pretty good to eat too!

Taco Corn Bread Casserole


1 package (8 1/2 oz) corn bread/muffin mix
1 egg
1/3 cup milk
3 cups cooked taco seasoned meat
1 can black beans
1 cup (8 oz) sour cream, light
1 cup colby jack, cheddar or mexican cheese, shredded and divided
1/2 cup onion, chopped
1 medium tomato, chopped
1 cup shredded lettuce
1 can sliced olives (optional, I didn't use)

In a large bowl, combine the corn bread, egg and milk until blended. Spread into an 8 x 8 pan sprayed with cooking spray. Bake at 350 for 15 minutes. Combine taco meat and beans, spread over corn bread. Combine sour cream, 3/4 cup cheese and onion. Spread over meat mixture. Bake for 20 - 25 minutes longer or until heated through and cheese is melted. Sprinkle with tomato, lettuce and remaining 1/4 cup of cheese.

Chicken Pot Pie


Ingredients
1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk

2 (9 inch) unbaked pie crusts
Directions
1.Preheat oven to 425 degrees F (220 degrees C.)
2.In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
3.In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
4.Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
5.Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Oven Baked Chimichangas


*Note: this recipe makes use of already cooked rice and chicken so plan ahead!

*Makes 6 chimis

1/4 cup canola or vegetable oil
1 onion, chopped fine
1 (16-ounce) can black beans, drained and rinsed
1 1/2 cups cooked brown or white rice
2-3 cups diced, cooked chicken
1-2 teaspoons minced canned chipotle chiles in adobo sauce (use the lesser amount for less heat, greater amount for a bigger kick)
1 cup shredded cheddar or monterey jack cheese (or a combination of both)
1/2 cup finely chopped fresh cilantro
Salt and Pepper
6 large burrito-size flour tortillas

Place a rimmed baking sheet in the oven and heat the oven to 450 degrees. While the oven is heating, in a large skillet, heat 2 tablespoons of the oil over medium heat until the oil is shimmering. Cook the onion until it is just softened, about 3 minutes. Stir in the beans, rice, chicken and chipotle and cook until the mixture is heated through, about 3 minutes. Off the heat, stir in the cheese and cilantro. Season with salt and pepper to taste (I used about 1/4 teaspoon each).

Stack the tortillas on a plate and cover with a damp paper towel. Microwave the tortillas until they are warm and pliable, about 1 minute. Top each warm tortilla with some of the chicken mixture, leaving about a 2-inch border at the bottom of the tortilla. Fold in the sides and roll up the tortilla tightly. Brush the wrapped tortillas with the remaining oil and arrange them seam side down on the hot baking sheet that has been preheating in the oven. Bake until the chimis are golden brown and crisp, about 8 to 10 minutes. Serve.

Crock Pot Chicken and Dumplings


You Will Need...
- Chicken Breast or Pieces (I used a pack of Chicken Tenders)
- 2 TBS of Butter
- 2 Cans of Cream of Chicken
- Water
- 1 Sweet Onion
- 1 Large Can of Biscuits (8 or 10 count)
- Pepper

*TIP* I found this Dish to be alittle on the Salty side (due to Cream of Chicken Soup) so use water & not broth and just pepper for seasoning and not salt!!

Add Your Butter, Cream of Chicken, and Onion to your Crock-Pot and stir until mixed. Add in your Chicken and season with Pepper. Add some water to dilute and cover chicken (About 1/2 a cup)...

Set your Crock-Pot to HIGH & cook for 6 Hours....

About 45 minutes before eating time take your biscuits and cut them in half. With the palm of your hand flatten the biscuits out. (I did this to help speed cooking).. Add to your Crock-Pot and continue cooking on HIGH...

While the biscuits are cooking you can fix your sides if you like. We had Carrots, Green Beans, and yummy Mashed Potatoes with it!!!

Chicken Enchilada Pizzas


The Sisters Cafe

4 flour tortillas (8-10 inches in diameter)
1 T. vegetable oil
1 medium onion, thinly sliced
2 c. chopped cooked chicken breast
½ c. green salsa (salsa verde)
1 can (2 ¼ oz) sliced ripe olives, drained
1/3 c. sour cream
1 c. shredded Monterey Jack cheese (4 oz)
1 large tomato, chopped (optional)
Chopped fresh cilantro


Heat oven to 400°. Place tortillas on ungreased cookie sheet. Bake about 5 minutes or until crisp.
While tortillas are baking, heat oil in 10-inch nonstick skillet over medium heat. Cook onion in oil, stirring frequently, until tender; remove from heat. Stir in chicken, salsa, and olives.
Spread sour cream on tortillas. Top with chicken mixture, chopped tomatoes if desired, and cheese. Bake 5 to 6 minutes, or until cheese is melted. Sprinkle with chopped fresh cilantro.

Chicken Pot Pie

2 unbaked pie crusts (or double the pie crust recipe here)
1 lb. leftover roasted fauxtisserie chicken, chopped into bite-sized pieces
1 12-16 oz. bag of peas and carrots or mixed vegetables, thawed
1 onion, minced
butter
5 medium-small red potatoes, diced
2 cans cream of chicken soup (or one recipe of homemade cream of chicken soup)
1/2 tsp. Kosher salt (more or less, to taste)
Ground black pepper to taste

Preheat oven to 400. Bring a large pot of water (salt optional) to a boil. When ready, add potatoes and boil until tender. Meanwhile, heat about 1 Tbsp. butter in a medium skillet. When the butter is bubbly, saute the onion until it's translucent and fragrant. Set aside.

In a mixing bowl, combine cream of chicken soup, chicken, vegetables, onion, and potatoes. Season to taste.

Now...the pie can be done a couple of ways. Normally, I make one family-sized chicken pot pie like Dani does, but my most recent adventure in Chicken Pot Pie-Land involved little individual mugs/ramekins of chicken pot pie. It was a big hit! The baking directions are exactly the same, except that the mug pies ONLY have a crust on top (which cuts down on the fat; in fact, you could get away with 1 pie crust if you do it this way).

ANYWAY. If you're making one whole pie, place one pie crust on the bottom of a pie plate, transfer the filling to the pie plate, and then top with the other pie crust. Crimp the edges and then cut a few vent holes on top.

If you're making individual pies in oven-safe jars, mugs, or ramekins, fill the dishes with the chicken mixture
and then top with a piece of pie crust slightly larger than the opening of the dish. Crimp the edges and cut some vent holes.

Place pie plate/individual pies on a baking sheet and bake for 40-45 minutes or until the crust is golden brown. Remove from oven and allow to stand for a few minutes before serving.

Cheesy Bacon Green Bean Casserole Pot Pie


1/2 lb bacon sliced into 1/2 inch pieces
1 Tablespoon fresh minced garlic
12 oz bag of fresh trimmed green beans
1 stick butter
1/2 Cup all purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
1 1/2 Cups chicken broth
1 1/4 Cups shredded cheddar cheese
1 sheet puff pastry thawed

1. Preheat oven to 350 degrees F. Cook bacon in medium dutch oven over medium heat until browned and crisped. Transfer bacon to a paper towel lined plate then discard all but 2 Tablespoons of bacon drippings. Saute onions in remaining bacon drippings until softened, about 5 minutes, stir in garlic and cook for a minute. Reduce heat to low. Boil green beans in pot for 5 minutes, until just fork tender. Transfer beans to a ice water bath. Add beans to onions and garlic along with the crisped bacon.

2. To make sauce melt butter in a medium saucepan over medium heat. Whisk in flour, salt and pepper until well combined then whisk in chicken broth until thick and creamy, for about 3-4 minutes. Once hot and creamy stir in shredded cheese until melted. Pour cheese sauce over beans then transfer to a 9 inch pie plate. Trim square puff pastry edges to more of a round (does not have to be perfect). Lay puff pastry over beans, folding edges under. Cut 4-5 slits to allow for steam to escape. Bake for 35-40 minutes or until puff pastry is nice and golden. Let cool for 15 minutes before slicing into.

6-8 servings

Chicken Tacos


1o chicken tenders
1 Jar Salsa
1 Can Cream of Chicken Soup
1 C. Minute Rice

Put chicken in crock pot. Combine salsa and cream of chicken soup. Pour mixture over the chicken. Cook on high for 4 hours or low for 8 hours. 15 minutes before serving stir in rice. Place mixture in warm tortillas with cheese and any other topping you like.

Chicken Tostada


1 can (4 oz.) diced green chilies
4 cloves garlic, minced
3 Tbs. chili powder
1 1/2 Tbs. lime juice
1 whole onion, diced
2 pounds boneless, skinless chicken
1 can refried beans
tostada shells
lettuce, tomato, cheese

*Put chicken breasts (or tenders) in crock-pot with onion. In a bowl, combine green chilies, garlic, chili powder, and lime juice. Spoon over chicken. Cook on low for 5-6 hours. Shred up when it is done. Spread warm beans on tostada shell, top with chicken and then put on desired toppings.

Creamy Chicken and Bacon Pastry Pockets

1 box puff pastry (2 sheets)
1 8oz container Philadelphia Chive and Onion flavor Cream Cheese
1/2 C shredded mozzarella cheese
1 1/2 C cooked shredded chicken breast
1/3 C cooked crumbled bacon
3 Tbs finely chopped sun-dried tomatoes
1 egg
1 Tbs water

Preheat oven to 400 degrees.

Warm cream cheese in the microwave for 20-30 seconds to soften. Place in a mixing bowl with mozzarella cheese, chicken, bacon, and sun-dried tomatoes. Stir to combine and set aside.

Defrost puff pastry sheets according to package directions. Lightly dust a work surface with flour and roll one sheet at a time into a 12 x 12 inch square. Cut 4, 3inch strips each direction to make 16 squares, 3 x 3" each.

Place about 2 teaspoons of cream cheese mixture onto each square. With your finger, brush a dab of water around the edges of each square and fold over diagonally to make a triangle. Press edges together and crimp with a fork to seal.

After stuffing and folding each pastry, place on a baking sheet. Whisk egg and 1 tablespoon water together and brush over the top of each pastry. Bake in preheated oven for 12-15 minutes or until puffed and golden brown. Cool 10 minutes before serving. Can also be served at room temperature.

Freezer instructions: Follow directions through egg wash. Place baking sheet in the freezer. When pastries are solid to the touch, transfer to an airtight container and store in the freezer. When ready to bake, place frozen pastries directly on a baking sheet in preheated 400 degree oven and bake for 15-20 minutes or until puffed and golden.

Grilled Chicken Burrito


2 chicken breasts
2 limes
Green onion
Cilantro
2 cups cheese
1 can of black beans-rinsed and drain
2 cups of shredded cheese
2 cups rice
6 tortillas
salsa and sour cream (optional)

Marinate 2 chicken breasts in lime juice (I did fresh lime squeezed) and a little salt and pepper for about an hour. Then slice into bite size pieces and fry it up.

Make about 2 cups of rice-instant or regular-doesn't matter. It the water, I squeezed half of a lime for flavor.

Chop up green onions (about 1/2 a cup), cilantro (about a 1/2 cup) and set aside. When chicken is done, mix with chicken.

Mix together the rise and the beans and layer on each tortilla. Then layer chicken mixture. Then cheese, sour cream (I did about a tablespoon on each burrito) and salsa. Roll up and butter each side of burrito. We baked ours on a George Forman, but a grill pan would work as well for about 4 minutes. Serve with guacamole, salsa, and sour cream.

Tostados


Tostado Shells

Ingredients:
1 - 1 1/2 cups of oil (enough to deep fry the tortillas in)
Corn tortillas

In a very small skillet, heat up the oil on med-high heat. You can test the oil to see if it is hot enough by sticking a small part of one of the tortillas in the oil. If it starts to bubble when you put the tortilla in, it is hot enough. With tongs, put the tortilla in the hot oil and lightly press the middle down. Leave it in the oil for about 10 seconds and then flip over and repeat. When the tortilla looks like ones in the picture above, take it out and dab it dry with a paper towel. Viola! You have a tostada shell!

Refried Beans:
2 cans of refried beans
3 tbsp. of margarine
1/5 cup of milk
salt
garlic salt

Put margarine in warm pan. Add the beans and mix until warm. Add the milk and mix well. Salt and garlic to taste.

As for the rest of the tostada....add whatever ingredients you like on your tostadas and enjoy!

Black Bean Enchiladas

from My Sisters' Cafe

Flour tortillas
shredded Colby Jack cheese

Sauce:
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1/2 cup shredded cheese (or more if desired...which I usually do!)
juice from canned tomatoes and chilies


Mix in separate bowl:
2 cups cooked chicken, cubed or shredded
1 can (14.5 oz) diced tomatoes and chilies, drained
1 can (15 oz) black beans, drained and rinsed

Spread a spoonful of sauce onto a flour tortilla. Top with chicken mixture and another spoonful or two of sauce. Roll up and line in 9x13 inch baking dish that has been lightly sprayed with cooking oil spray. Top enchiladas with rest of sauce and desired amount of cheese (I use about 1 1/2 cups). Bake at 350 degrees for 20 to 30 minutes.

Chicken Pot Pie


Chicken Pot Pie
Makes 1 pie serving 4-6

2 cups cooked, chopped chicken breast
1/2 cup frozen peas
1/2 cup cooked, diced carrots
1/2 cup cooked, diced potatoes
1/4 cup butter or margarine
1/4 cup chopped onion
1/4 cup flour
1 1/2 cups chicken broth
1/2 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried thyme
double pie crust

Combine chicken breast, peas, carrots, and potatoes in a bowl; set aside. In medium saucepan, melt butter. Sauté onion until clear. Whisk in flour and cook until bubbly. Whisk in broth and milk. Bring to a boil. Reduce heat and simmer until thickened. Stir in seasonings. Pour over chicken-vegetable mixture and stir to combine. Cool completely if preparing for freezer. Line pie plate with bottom crust. Pour in filling. Position top crust, crimp edges,* and bake at 375° for one hour or until crust is brown and filling bubbles.

If you want to make this ahead and freeze. Simply wrap with foil at the asterisk*, label, and freeze. To serve: Vent top and brush with milk. Bake at 450° for 15 minutes and then reduce heat and bake at 375° until crust is browned and filling bubbles, about one hour more.

• Mixed, frozen vegetables may be substituted for the peas, carrots, and potatoes.
• This is also delicious made with cooked turkey.

Hot Hoagies

1 loaf french bread, cut lengthwise
2 cups cooked, shredded chicken (in a pinch, you can use two large cans chicken breast)
1/2 cup light mayo
1/2 cup sour cream
1/2 teaspoon garlic salt
1/3 cup fresh parsley, chopped (or 2 tablespoons dried)
2 cups shredded cheese (I used a combo of monterey jack and sharp cheddar cheese)
Olives, chopped (0ptional - I omit these due to my kids' preferences)

Preheat oven to 350 degrees. Place french bread on large baking sheet. Mix all topping ingredients together in a bowl. Spread topping evenly on top of both lengths of french bread. Bake for 15-20 minutes until bubbly and edges are lightly browned. Slice into pieces and serve immediately.

Tortilla Casserole

From Everyday Food Storage

1 ½ C Sour Cream
2 Cans (10 ¾ oz) Cream of Chicken Soup
1 Can (7 oz) Diced green Chiles
1 Can (10 oz) Mild enchilada sauce
3 C cooked chicken or 3 cans chicken or turkey, drained (save the juices for broth!)
12 Corn tortillas, torn into bite size pieces (or Tortilla chips)
1 ½ C grated Cheese (Cheddar)

Save 1/2 C. of grated cheese and mix all other ingredients in a bowl. Pour mixture into 9×13 pan and top with remaining cheese. Cover and bake at 350 for 45 minutes. This casserole can be made ahead and put in the fridge. (Allow for extra baking time if you do this.)

Chicken Burritos

1 pound chicken breasts (thawed or frozen)
1 jar medium or hot salsa
1/4 – 1/3 cup brown sugar
1/2 cup sour cream

Put chicken breasts in crock pot and cover with salsa and brown sugar. Cook on low 4-6 hours. Shred chicken. Stir in sour cream and cook an additional hour.

Serve in warm tortillas with favorite taco toppings (cheese, lettuce, tomatoes, etc)

Oven Baked Chicken


1 tablespoon butter or margarine
2/3 cup Original Bisquick® mix
1 1/2 teaspoons paprika
1 1/4 teaspoons salt
1/4 teaspoon pepper
1 cut-up whole chicken (3 to 3 1/2 pounds)

1. Heat oven to 425°F. Melt butter in rectangular baking dish, 13x9x2 inches, in oven.
2. Stir together Bisquick, paprika, salt and pepper; coat chicken. Place skin sides down in dish (dish and butter should be hot).
3. Bake 35 minutes; turn chicken. Bake about 15 minutes longer or until juice is no longer pink when centers of thickest pieces are cut.
