Mad Scientist Potion

By Our Best Bites

Large glass jars or beverage containers
Brightly colored drink of your choice
Dry Ice (1 pound per gallon of potion)
Heavy-duty gloves and/or an oven mitt and tongs

Prepare drinks if necessary in the beverage jars. Otherwise, pour the drinks into the jars.

Carefully break up the dry ice with a mallet or a hammer. Add one piece (about 4-6 inches somewhere on the piece) per gallon at a time to the drink containers and replenish the dry ice as necessary. Serve immediately.

Note: The 1 pound per gallon rule will give you about an hour’s worth of potion. If you need 2 hours, you’ll need 2 pounds per gallon, and on and on. :)

Fresh Strawberry Limeade

by Our Best Bites

1 tall glass
Lots of ice
Sprite (or Diet Sprite…or Ginger Ale if you’re feeling wild)
1 1/2 limes
3-4 tablespoons Strawberry Sauce

Fill a glass with ice. Squeeze the juice of one lime into the glass over the ice. Fill the glass about halfway with Sprite. Add 3-4 tablespoons of strawberry sauce. Top the glass off with Sprite and add more strawberry sauce if desired. Garnish with lime wedges (which you can also squeeze into the glass before drinking. Definitely best when served with a straw.

Frozen Hot Chocolate

from My Kitchen Cafe

4 ounces of your favorite chocolate (I used semi-sweet chocolate)
2 teaspoons store-bought hot chocolate powder (I used milk chocolate powder)
1 1/2 tablespoons sugar
1 1/2 cups milk
3 cups ice cube
slightly sweetened whipped cream
chocolate shavings (optional)

Chop chocolate into small pieces and melt in microwave on low heat. Once melted, add hot chocolate mix and sugar, stirring constantly until thoroughly blended. Slowly add 1/2 cup milk, stirring until smooth. Cool to room temperature. In blender, place the remaining 1 cup milk, room-temperature chocolate mixture and ice. Blend on high speed until smooth and the consistency of a frozen daiquiri. Enjoy! (This recipe made a large blender full - I got around 4 (8 oz.) servings from one batch.

Citrus Water

from Sister's Cafe

2 T citric acid (buy at pharmacy)
1 bag crushed ice
5 quarts water
2 cups sugar
2 T lemon extract
3 sliced lemons
3 sliced limes
3 sliced oranges

Stir water, sugar, citric acid, and extract together. Add sliced fruit and ice.

Freshly Squeezed Lemonade

From Sister's Cafe

5 lemons
5 limes
5 oranges
5-6 cups cold water
1 1/2 -3 cups sugar, to taste

Once you have juiced all the fruit, add the water and sugar to taste. It really depends on how sweet/tart the citrus are and how much juice you get out of them. Also it depends on how sweet you like your lemonade!

Rasberry Lime Rickey

from Kitchen Cafe

12 oz. package frozen raspberries
2 cups sugar
1/2 cup water
4 teaspoons grated zest and 1/2 cup juice from 4 limes (It took 4 limes to get the 1/2 cup juice but I only used the zest from 3 limes - it was plenty)
Club soda, chilled
Ice

Heat raspberries, sugar, and water in a saucepan over medium heat until the raspberries begin to release their juices, about five minutes. Mash the berries with a potato masher until the berries break down, then stir in the lime zest and juice. Simmer until the mixture is slightly thickened, about five minutes.

Pour the raspberry mixture through a fine-mesh strainer set over a bowl, pressing on solids to extract the liquid. This works best done in batches so the seeds don't clog up the bottom of the mesh strainer. You should end up with about 2 1/2 cups syrup. Discard the berry solids. Refrigerate the syrup until completely cool, at least 30 minutes or up to 1 week. To serve, combine 3/4 cup club soda and 3 tablespoons syrup in tall, ice-filled glasses.
