Easy & Delicious Bagels

Mix
1 1/2 cup warm water
1 tbsp (saf) yeast
1 tsp salt
2 tbsp sugar
3-4 cups flour

Optional:
1/2 cup raisins
3 tbsp cinnamon
or
1/2 cup Parmesan
1/2 cup cheddar cheese

Mix for 5 minutes. Oil your hands and grab a handful of dough. Shape it into a bagel, working it with your thumbs to poke a hole in the middle. Place them on a greased baking sheet. Let them rise 20 minutes. Start water boiling, then place bagels top down in boiling water, for 10 seconds, turn over for 10 seconds more on the other side. (This is a bagel 4 inches across.) Remove from water with slotted spoon to let drain. Place back on baking sheet. Bake for 20-25 minutes at 350 degrees.
